Skillet Chicken Cacciatore

About the Recipe

This is a family favorite. We always add extra olives as we like the flavor!


  • 2 pounds chicken (mix of breasts and thighs), cut into bite sized pieces

  • 1 quart Abundant Garden marinara sauce

  • 1 cup Black Olives, sliced

  • 1 cup fresh Button Mushrooms, sliced

  • 1/2 cup Onion, diced

  • 2 cloves Garlic, minced

  • 1/2 cup Dry Red Wine

  • 1/2 tsp dried Oregano

  • 1/2 tsp dried Basil

  • 1/2 tsp dried Parsley

  • Cooked penne pasta, to serve

  • Grated Parmesan, to serve


Step 1

In a large skillet, brown the chicken pieces in a splash of vegetable oil. When hte pieces have been sealed, remove from heat and set aside.

Step 2

In the same pan that was used for the chicken, sauté the onion until softened, then add the garlic and sauté for 2 minutes more, until teh garlic is fragrant. Add the Abundant Garden marinara, mushrooms, olives, and herbs, and bring to a steady simmer.

Step 3

Add chicken pieces to the pan and simmer for 15 minutes until the chicken is fully cooked. Add the wine and continue to simmer until reduced, about 5 minutes.

Step 4

Once simmered, serve hot over penne pasta and top with grated parmesan. Serve with a side salad and out Industrial Strength Garlic Bread.
